Our Impression:
First Steep: This tea opens with a vegetal umami flavor, smooth and complemented by a pleasant astringency and a sweet aftertaste. It has a good body and texture, creating a rounder mouthfeel.
Second & Third Steep: The flavor profile evolves into spicy and citrusy notes, with a relatively low astringency and a continued sweet aftertaste.
The sharpness and light astringency is a part of the tea's character, possibly because it's shincha. As shincha, it tastes sharper and more interesting, whereas it mellows with age. I appreciate its sharpness as it highlights all its features.

- Fresh green, reminiscent of freshly torn leaves
- Floral
- Citrus (lime leaf)
- Umami
In many senchas, floral aftertastes and astringency are linked, sometimes a trade-off for certain notes. Astringency plays an important role in texture, providing balance and structure.
Shincha has its own unique characteristics. Don't blame it for being what it is, and don't expect it to be something it's not. It may not always be the ultimate version of your favorite sencha, but it offers a unique and intriguing experience.
Overall, this tea is very good with interesting development.
